Made with fresh or frozen rhubarb, they're vegan, low gluten and completely irresistible. One of the best things about spring is the fresh produce that suddenly becomes available.

Preheat oven to 375ยฐF. Line twelve 2ยฝ-inch muffin cups with foil liners or use a silicone muffin pan. (See tip, recipe intro.) In a large bowl stir together the first five ingredients (through salt). In a small bowl combine flaxseed meal and ยผ cup water; let stand 5 minutes.

(optional) Fill the remaining cups with 1 to 2 tablespoons of water to help the muffins bake evenly. Whisk the flour, baking powder and salt in a large bowl.

Place the sugar and buttery spread in a mixing bowl and beat with a hand mixer to cream. Add the egg and beat until smooth. Place the flour, baking powder, cinnamon, and salt in a large bowl and whisk to combine. Add half of the dry ingredients and roughly half of the milk beverage and stir to just to combine.
